TECHNICAL SECTOR

In the patent documents, WO 2007007202 A2, WO 2011141690 A1, a solution is proposed to this problem by incorporating a scraper made of elastomeric material adjusted to its external contour, which is designed specifically for the purpose of detaching the ingredients. that adhere to the walls of the bowl during its rotation, at the same time that the shovel performs the mixing of said ingredients.

The use of the kneading hook as a single tool presents significant problems when processing the dough: first, when starting kneading, if the dough has a medium-high hydration, that is, between 65% and 80% of water with respect to 100% flour, the ingredients adhere to the walls of the bowl, whereby the hook is unable to mix and process the ingredients that have to form the dough, this makes it necessary to stop the kneading process and use a spatula to detach the ingredients from the walls of the bowl and thus be able to continue with the process, even so, the dough is likely to continue adhering, making it necessary to repeat this operation continuously and cyclically. Such a combination of a kneading hook and a counter-tool that cooperates in the manner described above, improves the kneading process in part, as we have explained previously in the present patent application, although it continues to present the problem that in both cases the counter-tool is far from the walls of the bowl and, consequently, especially in masses of medium-high hydration there is an amount of remaining mass adhered to the walls of the bowl, which does not get to mix with the rest of the dough to process , which prevents obtaining a homogeneous mass, which makes it necessary to stop mixing and use a hand spatula to detach the dough that has remained adhered around the inner walls of the bowl.
In the international patent application WO 2009153250 A1 a food processing apparatus is described, which has a kneading hook, whose axis is arranged obliquely, forming an acute angle with respect to the axial symmetry axis of the bowl of the apparatus, with the purpose of achieving a greater range of action during kneading. The apparatus described in said patent application has a deflector that rotates in the opposite direction to the kneading hook, designed with the purpose of preventing the processed dough from rising towards the top of said kneading hook and coming into contact with other parts of the apparatus They are not convenient.
With the techniques described above, certain improvements in kneading are achieved, as long as the dough has adequate consistency and degree of hydration, this is due to what has already been said, that between the dough, the hook and the walls of the bowl there is only friction and adhesion, that is, there is no tool that interacts jointly with the kneading hook, therefore, if the dough has a high hydration point, such as the baguette and ciabatta, said dough adheres to the walls of the bowl preventing the hook from performing its task, making it necessary to use a spatula to detach it from the walls of the bowl, in the opposite case of having a hydration point too low, the dough will roll very often around the kneading hook, turning in a vacuum, that is, without load, without being able to process it, rubbing it against the walls of the bowl and consequently increasing the end temperature to that of the dough, at the same time that the kneading time is prolonged.

DESCRIPTION OF THE INVENTION
In order to achieve the objectives and avoid the inconveniences mentioned in the previous sections, the invention proposes an apparatus for preparing food doughs, which integrates a disposition of tools driven by a planetary drive, whose purpose is to mix and knead the contained ingredients. in a bowl, preferably, but not limited to, doughs made from flour, such as breads, buns and cakes.
With this invention, the dough does not remain adhered to the walls of the bowl and, therefore, it is not necessary to use any external means, such as a spatula to detach the dough from said walls of the bowl, a process that forces stop kneading, in addition, among other advantages, it should be noted that the kneading time is significantly shortened, while obtaining a more homogeneous mass and, consequently, a finished product of higher quality, of greater volume and optimum texture.
The explanation of why this significant improvement is found in the combination of the tools involved in the mixing and subsequent kneading of the ingredients. The apparatus object of the invention comprises a frame that serves in its lower support part of a bowl type container, in which the ingredients to be mixed and subsequently kneaded are introduced, while the upper part of said frame is tiltable and acts as a support for an engine that drives a planetary drive and, together, forms a planetary drive unit.
The apparatus for preparing food doughs further comprises an arrangement of tools driven by the planetary drive unit, which includes as a main tool a kneading hook with a helical shape. The kneading hook is integrated by a shaft at the top and then a disk from which the hook itself is presented helically.
The axis of the kneading hook has a union system, which can be quickly coupled and disengaged to the planetary drive unit by a small turn. The axis of said kneading hook, in a planetary movement, rotates around a main rotation axis, which is collinear to the axial symmetry axis of the bowl, while rotating on itself.
The arrangement of tools of the invention also comprises an auxiliary tool, which includes a scraper of elastomeric material, whose lip adapts to the profile of the walls of the bowl. Said scraper due to its lack of rigidity is attached to a support of the scraper, to avoid deformations before the forces acting on it during the process of separating the dough from the walls of the bowl. It also comprises a triangular section knife, whose lower end is close to the bottom of the bowl, preferably, but not limited to, between 2 and 10 mm.

An important feature of the invention is that the blade and the scraper rotate concentrically around the main rotation axis, integral with the kneading hook and this, in turn, rotates on itself in the opposite direction, on a secondary rotation axis in A planetary movement.
According to another characteristic of the invention, the bridge support in its central part preferably has, but not limited to, an oblong hole.
